Our caramelised balsamic vinegar has been specially crafted to complement the flavour profile of our premium olive oil. Our vinegar embraces the gentle acidity of fruit sugars and some spice for complexity, with deep caramel and balsamic flavours.
Our organic olive oil is a unique early harvest style with fruity, herbaceous flavours and a subtle peppery finish. Cold-pressed from olive varieties, including the rare bouqettier, mission, and the verdale this organic oil is unfiltered, unrefined, and lovingly hand bottled in small batches. All of our gourmet products are organic, high in nutrition and free from chemicals and pesticides, so you can feel good about incorporating them into your diet.
Our wild honeycomb is sourced from our forest hives in the Ravensbourne High Country, Queensland. Our bees forage on wildflowers, native flowers and many flowers we grow primarily for them on our farm. Biting down on a rich, sticky piece of our wild honeycomb is a unique gastronomic experience; pure honey’s wonderful flavour and aroma are amplified when preserved in the thin wax chambers of the comb. This pairs perfectly with cheese, yoghurt, muesli or as a healthy chocolate alternative.

We have been using Inspired by Night Condiments for several years and it has become one of our pantry staples.
